The box for the guy who flips the grill every weekend and figures he's seen it all. Kampot black, cracked coarse in a mortar, signs a thick steak seared over direct heat on a screaming-hot grate. Danish smoked salt, worked into a dry rub for ribs, delivers the smoke depth that a backyard charcoal kettle rarely runs long enough to build. Maldon goes on at the very end, over the sliced, rested meat, for the crystal crunch. Sumac, whisked into yogurt with a clove of garlic, makes the lamb marinade that retires the bottle of lemon juice. Smoked paprika de la Vera — the real DOP, oak-smoked — carries the rub and the homemade BBQ sauce.
