Three vinegars that prove the category is as varied as olive oil. Modena balsamic IGP, aged twelve years and syrupy, has lost all its raw acid bite and turned into a sweet-sour condiment: three drops on a ripe strawberry, a shaving of aged Parmesan, and you're done. Sherry vinegar from Jerez, PDO-protected and barrel-aged under the Andalusian sun, brings a nutty, amber roundness built for sharp vinaigrettes and for deglazing a pan of fish. Raw cider vinegar, unfiltered and alive with the mother, keeps an apple-and-hay note that talks to roast chicken or a caramel-apple dessert. A pairing card gives the exact dose per use — three drops of balsamic on a strawberry, a tablespoon of sherry in a vinaigrette — and the pairings to avoid. The catch: don't waste the twelve-year balsamic in a salad dressing. Its job is the finishing drop, raw and cold; cook it and you've burned off the years you paid for. The cheap supermarket balsamic is fine for the everyday vinaigrette. Save this one for the plate.
