Which cinnamon for Christmas pudding?

Season : winter · Occasion : christmas, festive

Saigon cinnamon. Its sky-high oil content survives the long steam where mild Ceylon fades into nothing. Mix it into the batter with the mixed spice, not at the end. Use it sparingly: half a teaspoon carries a whole pudding, because Saigon is the hottest, sweetest cinnamon on the shelf.

In detail

The best cinnamon for Christmas pudding is Saigon cinnamon, the hottest and sweetest bark on the shelf. Despite the name it isn't true cinnamon but a cassia, Cinnamomum loureiroi from central Vietnam, carrying one of the highest essential-oil contents of any cinnamon, often 4 to 6 percent against roughly 1 to 2.5 percent for Ceylon. That oil is why it matters here: a pudding steams for hours and delicate Ceylon fades to nothing, while Saigon's sweet, almost peppery punch survives the long cook and holds its own against the dried fruit and brandy. Mix it into the batter with the mixed spice rather than at the end, and use it sparingly, around half a teaspoon, since it is far stronger than ordinary cinnamon. Burlap & Barrel's single-origin Royal Cinnamon runs about £9 for a 1.8oz jar; the supermarket cassia does fine for a fruit-heavy pudding.

The catch

The catch: a Christmas pudding steams for five or six hours, and that's where delicate Ceylon cinnamon dies. People reach for the "true" cinnamon thinking finer is better, then wonder why the spice reads flat. Saigon's high oil content is what survives the long steam. For once, the bold cassia beats the refined bark, because here you're cooking the spice half to death and only the strong one comes out the other side.

Chef's note

Sift the Saigon into the dry mix with the mixed spice and nutmeg, never sprinkle it on late, so it disperses evenly through the batter before the fruit goes in. Half a teaspoon for a standard pudding is the ceiling, because Saigon is hot and sweet enough to tip into cinnamon-candy if you pour. Taste the raw batter on a fingertip and pull back if the heat stings.

Tasting note

hot cinnamon candy · sweet bark · clove warmth · dark caramel · Burlap & Barrel's single-origin Royal Cinnamon runs about £9 for a 1.8oz jar. Worth it once a year if you bake your own pudding. For a shop-bought one you're just reheating, the supermarket cassia is fine and you'll never tell the difference under all that brandy.

Frequently asked questions

Why does Saigon cinnamon work better in Christmas pudding?
A pudding steams for hours, and milder Ceylon cinnamon fades in that heat. Saigon's high essential-oil content keeps its hot, sweet punch through the long cook, standing up to the dried fruit and brandy.
How much cinnamon does a Christmas pudding need?
Use Saigon sparingly, around half a teaspoon, because it is far hotter and sweeter than ordinary cinnamon. Mix it into the batter with the other spices rather than adding it late.
Can I use supermarket cinnamon instead?
For a rich, fruit-heavy pudding the supermarket cassia does fine, since the brandy and dried fruit carry the flavour. Single-origin Saigon is the splurge if you want the spice to read clearly.
