Shave about 3 to 5 grams per person over the finished plate off the heat, or warm it gently for five to ten minutes at most, since long cooking over 15 minutes burns the aroma off. The catch

Truffle oil is not truffle. Most of it is a synthetic aroma molecule in a neutral oil, with little or no actual fungus, and it reads one-note and harsh next to the real thing. For a simple pasta, that shortcut is the whole mistake: you taste chemistry, not forest floor. Fresh Périgord black truffle, shaved raw, gives the cocoa-and-humus depth oil only caricatures. Skip the bottle.

Shave it raw, off the heat. Toss the hot pasta with butter and a little parmesan first, pull it off the burner, then shave 3 to 5 grams per person straight over each plate.
