Four genuinely American condiments, for the cook who wants to source close to home instead of always reaching across an ocean. Jacobsen is the proof that the U.S. makes a world-class finishing salt — hand-harvested from the cold, clean Pacific of Netarts Bay on the Oregon coast, with bright, crisp flakes that hold up on a steak or a chocolate-chip cookie. Sourwood honey, the prized monofloral of the southern Appalachians, has a delicate spiced, almost anise note that's superb on a warm biscuit or a sharp cheese. Hatch green chile, the pride of New Mexico's Mesilla Valley, brings a meaty, roasted heat to a pot of green chile stew, breakfast eggs, or a smothered burrito. Chimayó red chile, earthy and only mildly hot, is the heirloom New Mexico powder for enchilada sauce and dry rubs. A card pairs each with its anchor dish. The catch: Hatch and Chimayó are not interchangeable with generic "chili powder," which is a pre-blended mix cut with cumin and oregano. These are pure, single-chile powders — season with them and add your own cumin, don't expect the jar to do it for you.
