Five condiments for the cook who treats smoke not as a gimmick but as a dimension. Danish beechwood-smoked salt in a warm potato vinaigrette, in a dry rub for pork, in a butter spread on dark rye. Oak-smoked Maldon, the flake version, on a homemade cured salmon or a herb omelette — the crunch and the smoke both. Smoked paprika de la Vera, the real oak-smoked DOP, in a chorizo-style rub and in a smoky bean stew. Tellicherry black, cracked, on a pork chop smoked over applewood. Traditional tamari, denser than soy sauce, signs the marinade for charcoal-smoked eggplant or seared portobello caps. A recipe booklet covers four home-smoking techniques (wood chips, black tea, cold-smoking in a tin, infused smoke).
