Built for five months of grilling, May to September. Kampot black, coarse-cracked in a mortar, on a thick steak laid over a preheated cast-iron grate. Maldon, in an open dish near the grill, scattered at the finish once the meat is sliced and rested. Smoked paprika de la Vera — the real oak-smoked DOP — whisked into a yogurt or stirred into a homemade BBQ sauce, the spice that makes a rub taste like more than salt and pepper. Chestnut honey, thinned with a little water and vinegar, to glaze ribs or duck legs. Brined green peppercorns, mashed with a fork into a white-wine-and-cream pan sauce for a quick-seared beef tenderloin. The box runs five months of regular use for four. A foldout card gives ten meat-or-fish-plus-condiment pairings, each with an exact internal temp. No industrial rub, no hidden blend: every ingredient is legible. The catch: green peppercorns are picked unripe and packed in brine, so they're soft and fresh, not dried — drain and crush them, don't try to grind them in a mill, and use them where you want pepper flavor without the dry bite.
