Most people think vanilla is one flavor. It's three distinct aromatic families, and they don't behave the same way. Madagascar Bourbon, plump and dark, is the workhorse of American and French baking — crème anglaise, rice pudding, the base note of a good vanilla ice cream. Tahitian is more floral, almost cherry and anise, and it refuses long cooking: use it cold, steeped into cream for a panna cotta or shaved over a pineapple carpaccio. Papua New Guinea is the rarest of the three and the surprise — a cocoa, faintly smoky profile that talks to a 75% dark chocolate mousse or a roasted squash soup.
