Tonka, microplaned over a whipped 70% dark chocolate ganache, a warm yogurt cake, a honey-roasted fig — the almond-vanilla-coumarin note that always gets a "what's in this?" Star anise in a long-cooked apple compote, in a mulled-wine syrup with cinnamon, or simply ground into a crumble topping.
