Five salts that look nothing alike on the plate. Maldon is the texture salt: those hollow Essex pyramids shatter under your teeth, which is the whole point on a rare ribeye and a waste in the braise. Fleur de sel de Guérande is the mineral reference — fragile crystals, a long, faintly sweet salinity you scatter raw over nearly everything. Himalayan pink, marketing halo aside, is a perfectly good cooking salt: softer and more mineral than table salt, fine for a brine. Hawaiian Hiwa Kai, coated in activated coconut-shell charcoal, plays the visual contrast as much as the faint sulfur note — striking on a jammy egg.
