Diamond Crystal kosher is the salt you dry-brine the turkey with — its light, hollow flakes are easy to scatter evenly under the skin two days ahead, which is the single biggest upgrade to a Thanksgiving bird. Maldon goes on the table in an open dish for the finish: a pinch on the carved breast, a pinch on the mashed potatoes. Tellicherry pepper, the round high-grade black from Kerala, builds the gravy and the stuffing. Saigon cinnamon — the high-oil one, far louder than supermarket cassia — carries both pies.
