The catch

Don't reach for black sesame to fake the black seed in an everything mix. Black sesame is flat, oily and mild; it gives you the color but none of the savor. The black seed you actually want is nigella, with its toasted-onion and peppery bite. Swap in sesame and you've made a prettier blend that tastes blander, and missed the one seed that makes everything taste like everything.

Chef's note

Build the mix by volume: roughly two parts white sesame to one each poppy, dried minced garlic, dried minced onion, and nigella, plus a little flaky salt. Don't pre-toast the nigella for this; the bagel's bake blooms it for you. Egg-wash the formed bagel, then press the face down into the seed mix on a plate so it actually sticks, rather than sprinkling from above where half rolls off.
