Coarse gray Guérande salt goes in the boiling water, the court-bouillon, the salt crust on a whole sea bass. Penja white pepper IGP — arguably the finest pepper for French cooking, and white so it disappears into a pale cream sauce — sits in the béchamel and on the poached white fish where black flecks would look wrong.
