The box of so-called "classic" French cooking — the grammar you find in Robuchon, Bocuse, Senderens. Coarse gray Guérande salt goes in the boiling water, the court-bouillon, the salt crust on a whole sea bass. Penja white pepper IGP — arguably the finest pepper for French cooking, and white so it disappears into a pale cream sauce — sits in the béchamel and on the poached white fish where black flecks would look wrong. Madagascar Bourbon vanilla in the crème pâtissière, the ice cream, the Sunday rice pudding. Iranian saffron for the noble fish sauces. Chestnut honey, dark and tannic, on a wedge of aged Comté and in winter tisanes. Twelve-year Modena balsamic, three drops, on a slice of seared foie gras or late strawberries. Six products, six French or PDO/IGP origins, covering the bases of traditional cooking. A 16-page recipe booklet ships with it — ten revisited classics (sole meunière, lemon tart, blanquette, mustard chicken). The catch: white pepper isn't just black pepper without the skin — it's earthier and slightly funky, so use it where you want the pepper to vanish visually, not where you want bite.
