Five condiments for getting into serious Indian cooking without going through jarred curry powder. Kerala green cardamom, whole pods, scents basmati rice, milky chai, a chicken biryani — crush the pods lightly with the flat of a knife before they go in. Tellicherry, the premium grade from Kerala, is the pepper Indian cooking burns through: cracked coarse into marinades and coconut curries. Kala namak — sulfurous Indian black salt — is the vegan secret weapon: three grains turn a tofu scramble into a startlingly convincing "scrambled eggs." Pragati turmeric, bred for high curcumin, is the earth and color under every curry — bloom it in hot oil for thirty seconds to wake it up. Nigella, scattered on naan, adds a toasted onion-and-hazelnut note. The box ships with two complete recipes: a lamb biryani and a red-lentil dal, both calibrated for four with exact doses. The catch: don't add the turmeric raw at the end for color — it tastes dusty and bitter that way. It needs to fry in fat or simmer in the pot to lose its raw edge.
