Three oils, three olive varieties, three harvest moments — and almost nothing in common. The Provence PDO, pressed from ripe fruit, is round and buttery, almost apple-soft: it warms a ratatouille or a tapenade. The Cretan Koroneiki, picked green, throws a real pepper kick at the back of the throat — the sign of a high-polyphenol oil — and shines on raw salads and fish off the grill. The Tuscan blend of Frantoio, Moraiolo and Leccino fights back with a green, artichoke-and-tomato-leaf bitterness: this is the oil you pour over bruschetta or stir into ribollita. All three ship in tinted glass to protect the aromatic compounds from light. A tasting card walks you through the three steps any oil judge uses: fruitiness, bitterness, pungency. Here's the part the supermarket aisle won't tell you — a good extra-virgin oil should sting your throat a little.
