Which pepper pairs with strawberries?

Season : spring, summer · Occasion : dessert, date night, casual

Kampot. Its green citrus, dried-flower and eucalyptus notes read almost like fruit against ripe strawberries, lifting their sweetness instead of fighting it. Crack it coarse and fresh over the sliced berries with a little sugar or a few drops of balsamic. This is a finishing move, so keep it off any heat.

In detail

The pepper that pairs best with strawberries is Kampot black pepper, cracked coarse and raw over the sliced berries. Pepper on strawberries works only when the grain reads as fruit rather than heat, and Kampot is built for it: green citrus, dried white flowers and eucalyptus over a clean bite that wakes the berries up and lifts their sweetness instead of fighting it. It's Cambodia's PGI grain, picked green and sun-dried. Crack it fresh over sliced ripe strawberries with a little sugar or a few drops of balsamic, and keep it strictly off the heat, since this is a finishing move and the bright top notes are the entire point. A tiny pinch of fleur de sel sharpens the sweetness further. A 50 g tube runs about $12. Zanzibar, lemon-led, is the brighter alternative; crushed pink peppercorns make a sweeter, berry-like dessert version.

eucalyptus · dried white flowers · green citrus

Pepper on strawberries works because the right grain reads as fruit, not heat, and Kampot is built for it: green citrus, dried white flowers and eucalyptus over a clean bite that wakes the berries up. Crack it coarse and raw over sliced strawberries, with sugar or a drop of balsamic, and the menthol lift turns a bowl of fruit into something grown-up. Cambodia's PGI grain, about $12 for a 50 g tube.

The catch

Don't assume pepper on strawberries is a chef's gimmick. It works, but only with the right grain. A dusty, dull peppercorn just tastes wrong on fruit, all heat and no aroma. Kampot's green citrus, dried flowers and eucalyptus read almost like a fruit note themselves, lifting the berries' sweetness. The pairing fails with bad pepper and sings with good; the grain is the whole difference.

Chef's note

Slice ripe strawberries, dust them with a little sugar and let them sit ten minutes to draw out their juice. Crack Kampot coarse and raw over the top right before serving, with a few drops of balsamic and a tiny pinch of fleur de sel if you want to sharpen the sweetness. Keep it all off the heat: the bright top notes are the point.

Tasting note

green citrus · dried flowers · menthol lift over ripe fruit · about $12 for a 50 g tube, and a dessert uses barely a few turns. Worth it; the same tube you crust roasts with turns fruit grown-up.

Frequently asked questions

Does black pepper actually go with strawberries?
Yes, with the right pepper. A bright, fruity grain like Kampot or Zanzibar reads almost like a fruit note, lifting the berries' sweetness rather than adding heat. A dusty, dull pepper would just taste wrong; the grain matters.
How do I add pepper to strawberries?
Crack Kampot coarse and fresh over sliced ripe strawberries, with a little sugar or a few drops of balsamic. Keep it raw and off any heat: this is a finishing move, and the bright top notes are the entire appeal.
Which pepper is best on strawberries, Kampot or Zanzibar?
Both work. Kampot brings green citrus, dried flowers and eucalyptus; Zanzibar leads with lemon zest, which is one of its signature fruit pairings. Choose Zanzibar for a brighter, more lemony lift, Kampot for a floral, menthol-edged one.
