Seven condiments calibrated for a New Year's Eve menu for six. Iranian Sargol saffron — premium, all red threads — colors and scents a Champagne sauce for scallops or a creamy risotto. A whole Périgord black truffle, shaved at the table over scrambled eggs, fresh pasta, or risotto, is the centerpiece. Fleur de sel de Guérande on the caviar tasting, the shucked oysters, the warm blinis. Voatsiperifery, ground over a low-roasted venison loin. Tonka, microplaned over a 75% dark chocolate dessert. Tahitian vanilla steeped cold into a mascarpone cream for a tropical-fruit finish. Twelve-year Modena balsamic, three drops, on a slice of seared foie gras or late berries. A full menu dossier ships with it: a seven-course running order for six, exact doses, total prep time, suggested wines. The catch: a black truffle is at its peak for about a week and loses aroma fast in the fridge — store it in a sealed jar with the eggs you'll cook (the shell takes on the perfume), and shave it raw at the very end. Heat past a gentle warm-through kills the volatile compounds you paid a small fortune for.
