The catch

Don't shake shichimi onto dry popcorn and expect it to stick. It's a dry blend — it slides straight to the bottom of the bowl and you eat plain popcorn with a spicy last handful. Butter is the glue. Coat the hot kernels in melted butter first, then toss the shichimi through while everything is warm and tacky. Skip the fat and you've seasoned the bowl, not the snack.

Toss in a sealed container, don't sprinkle from above.
