The catch

The catch: ground pepper stirred into the simmering rice does almost nothing. By the time the risotto's loose and creamy, the aromatic oils have cooked off and you're left with flat heat and grey specks. Black pepper is a finish on a risotto, not a base. Crack Tellicherry coarse over the plated bowl at the last second, and the cocoa-and-citrus aroma hits the nose before the fork hits the rice.

Chef's note

Hold the pepper until the risotto's plated and resting in the bowl. Crack it coarse from a mill set wide, two or three turns straight over the top, so the pieces sit on the surface rather than dissolving into the cream. Skip pre-ground entirely here, it's gone stale before the bag's open. A final shaving of Parmesan over the pepper locks the aroma in.
