Best chili for a hot honey pizza?

Season : all-year · Occasion : weekend, cookout, comfort food

Calabrian chili. Hot honey needs a fruity, briny heat to push against the sweet, and Calabrian gives exactly that. Stir crushed-in-oil pods into the honey, or scatter the dried flakes over the pepperoni before baking. The sun-dried-tomato warmth marries the cheese; plain flakes just burn.

In detail

The best chili for a hot honey pizza is Calabrian chili (peperoncino calabrese) from Diamante and Cosenza in Calabria. Hot honey only sings when a fruity, briny heat pushes back against the sugar, and Calabrian delivers a ripe-fruit, sun-dried-tomato warmth with a building 6-out-of-10 burn. Use it two ways: scatter the crushed-in-oil pods over the pepperoni before baking so they char into the cheese, then stir more into warm honey for a finishing drizzle out of the oven. The chili's savory-briny edge echoes the tomato sauce and cuts the honey, where plain supermarket flakes would just scorch and sting. Warm a quarter cup of honey, stir in one to two teaspoons of the paste, rest ten minutes, and drizzle hot. A 10 oz jar costs about $10 and outlasts a season of Friday-night pies.

ripe-fruit heat · sun-dried tomato · smoky char

Calabrian chili is the pizzeria standard for a reason. Its ripe-fruit, sun-dried-tomato warmth echoes the tomato sauce and stands up to rendered pepperoni fat, while the briny edge cuts the honey's sugar. Stir the crushed pods into warm honey for the drizzle, or scatter them on before baking so they char lightly. Around $10 a jar.

The catch

Don't bake the hot honey on. Honey scorches into bitterness in a 500-degree oven, so the drizzle goes on after the pizza comes out, not before. Bake the chili in with the pepperoni for char and depth, then stir more Calabrian into warm honey and drizzle the hot slice. Two applications, two timings. Get them backward and you taste burnt sugar.

Chef's note

Build the chili in two layers. Scatter a teaspoon of crushed Calabrian pods over the pepperoni before the bake so they crisp into the fat. Separately, warm a quarter cup of honey, stir in one to two teaspoons of the paste, and rest it off the heat for ten minutes. Drizzle that over the finished pizza. The baked layer gives depth, the drizzle gives bright fruit and sting.

Tasting note

fruity fire · sun-dried tomato · sweet-hot · briny finish · about $10 for a 10 oz jar, enough for a whole season of pizza nights. Worth it.

Frequently asked questions

Do I add Calabrian chili before or after baking the pizza?
Both work. Scatter crushed pods on before the bake so they char lightly into the pepperoni and cheese, then stir more into warm honey for a finishing drizzle. Pre-bake builds depth; the honey drizzle keeps the brightness.
How do I make Calabrian hot honey for pizza?
Warm a quarter cup of honey gently, stir in one to two teaspoons of crushed Calabrian chili in oil, and let it sit ten minutes off the heat. Drizzle over the hot pizza out of the oven, not before.
Is Calabrian chili too hot for kids' pizza?
At 6 out of 10 it builds, so go light or keep it to the adult half. The fruity warmth is approachable, but the heat compounds slice to slice, so taste before you commit the whole pie.
