Seven peppers, side by side, for the cook ready to take pepper as seriously as wine. Four are true Piper peppers: Tellicherry, the vine-matured Kerala benchmark; Kampot black, the aromatic Cambodian PGI; Penja white, the earthy Cameroon IGP that vanishes into a pale sauce; and long pepper, the ancient catkin with its camphor-and-pine sweetness that predates black pepper in European kitchens. Then the cousins that aren't Piper at all: cubeb, the tailed pepper, resinous and bitter like allspice crossed with juniper; Voatsiperifery, the wild Madagascar vine pepper, floral and feral; and grains of paradise, the West African seed with a warm, citrus-cardamom heat. A tasting card walks the flight in order, with the botanical name and origin for each — the verifiable proof of what you're tasting. The catch: "pepper" is a botanical mess, and half this box isn't Piper nigrum at all. Don't expect grains of paradise or cubeb to behave like black pepper in a recipe — they're warmer, more aromatic, and a one-to-one swap will throw the dish. Taste each one solo first, on plain buttered toast, before you cook with any of them.
