The catch

Don't toss the eggplant in za'atar before it roasts. The wild thyme that makes za'atar worth buying scorches past about twenty-five minutes in a hot oven and turns flatly bitter, so a long roast burns off the very thing you paid for. Roast the eggplant naked until it collapses, then finish with the za'atar off the heat. And check the label: if the thyme is ordinary garden thyme, the whole jar tastes of nothing.
